Three experts share their views on how pastry and innovation can explore the possibilities of healthier and more nutritive ingredients and recipes, introducing a well-balanced dietary habit. This roundtable is also an introduction to the topics proposed within the new Diploma in Pâtisserie innovation & Wellness, which will start in April 2021 at the Institute Le Cordon Bleu Paris.

  • Florence Foucaut, Dietitian Nutritionist and Specialist in Nutritional Pathologies
